Two Trout Catering is based at the Eternity Playhouse, home of The Darlinghurst Theatre Company, and open for dinner whenever the theatre is in season.

Meet Our Team

Theo Hlorotiris

TITLE

Growing up in the southern suburbs of Sydney, Theo spent his early years working in the Family seafood restaurants growing an understanding of the food industry. In his early 20s left put on suit and tie and took to a desk job. Missing the enjoyment of cooking left a short while after to open his first seafood shop, Fish on Fire Glebe. Soon to be joined with his second in Taren point. In this time The friend ship with Lockie began. In 2011 the two shops were sold and a small break was in order. Soon to be over, with the opening on Fish on Fire Kogarah and his first Café, In The Annex in Forest Lodge in 2013. 2015 came around quickly and then began the working relationship with Lockie in Two Trout Catering.

Lockie Clifford

TITLE

Began working for the Family business at a young age learning the ways of business. During primary school a friend opened Lockies’ eyes to cooking showing him a simple pasta dish. Growing passionate for it started learning the art of cooking at high school in Glebe where he picked up a job working for Theo. After completing high school Lockie started chef training at Tafe in Ultimo where he began working in cafes, restaurants, and take aways all over Sydney learning both front of house operations as well as discovering many different cuisines.in 2015 joining forces with Theo to create Two Trout catering.
